Learning objectives
Starchy carbohydrate is an
important source of energy.
Disaccharides
These sugars are formed when two
monosaccharide molecules join together with
the removal of one molecule of water.
• Intrinsic sugars
These are within the cellular
structure of the food, e.g. in whole
fruit or vegetables.
• Extrinsic sugars
These sugars are not bound within
the cellular structure of the food,
e.g. the lactose in dairy products.

Animal sources:
• meat;
• poultry;
• fish;
• eggs;
• milk;
• dairy foods.
Plant sources:
• soya;
• nuts;
• seeds;
• pulses, e.g. beans, lentils;
• mycoprotein.
Protein:
• helps the body to grow and repair itself;
• forms structural and functional elements of
body cells;
• is needed for growth in muscle mass and
the maintenance of muscle mass and
normal bones;
• is involved in various metabolic reactions,
including signalling functions;
• provides energy: 1 gram of protein
provides 4kcal/17kJ.
