TAHU
Tahu adalah makanan yang dibuat dari kacang
kedelai yang difermentasikan dan diambil sarinya.
tujuannya untuk mengetahui cara pembuatan tahu
untuk menambah nilai ekonomis produk sebagai
diversifikasi produk olahan kedelai. Prinsipnya
berdasarkan proses koagulasi dari kedelai yang telah
dilakukan proses pemanasan dan dilanjutkan proses
pengepresan sehingga menghasilkan tahu.
 TAHU

Pada pembuatan tahu fungsi untuk melunakkan kacang kedelai sehingga memudahkan dalam proses selanjutnya,
Pencucian dan pengupasan berfungsi untuk membersihkan kedelai dimana akan memisahkan kulit ari dengan kacang
kedelainya. Penggilingan berfungsi untukuntuk menghancurkan butiran-butiran kedelai sehingga membentuk bubur
kedelai sesuai. Perebusan bertujuan untuk mematangkan bubur kedelai. Fitrasi bertujuan untuk memisahkan antara
ampas atau limbah padat dari bubur kedelai dengan filtrat yang diinginkan. Pencetakan dan pengepresan bertujuan
untuk untuk mengurangi kadar air yang ada dalam tahu sehinnga tahu dapat dengan mudah dicetak dan dibentuk,
setelah proses ini dilakukan pengukusan atau pemasakan agar tahu dapat layak dikonsumsi

dapat dijumpai dengan bentuk

digoreng kering, maka bagian
dalamnya akan terdapat rongga
dan kulitnya akan kecokelatan
dan renyah

putih, tetapi teksturnya lebih lembut
curdling (mengumpalkan) susu
dan lunak karena terbuat dari

bagian susu yang telah mengumpal
untuk sapo, mapo dan beragam

terjadi pamasakan yang berlebihan dan terjadi
kerusakan protein secara total.

 Koagulasi dilakukan menggunakan koagulan

yang tidak berbahaya dan sesuai dengan
ketentuan yang ada

 Pencetakan dan pengepresan harus diperhatikan

dengan tidak menekan terlalu keras agar tahu
tidak hancur.
