Tahap Modifikasi Resep Hewani
1. Analisa resep lama
● Nama resep lama : Ayam Kecap Lemon
● Golongan hidangan : Lauk hewani
● Bahan makanan utama : Daging ayam
● Teknik persiapan :Ayam dibersihkan, kemudian dipotong-potong. Selanjutnya cuci bersih daging ayam,
kemudian rebus dengan air garam sampai matang. Lalu tiriskan. Haluskan semua bumbu.
● Teknik pengolahan : Daging ayam direbus menggunakan air garam,setelah itu ayam ditumis bersamaan
dengan bumbu dan ditambahkan air perasan jeruk lemon.
2. Tujuan Modifikasi
● Untuk menambah daya terima konsumen terhadap lauk hewani yang dimodifikasi
● Penambahan bahan yaitu saus tiram dan saus sambal untuk menambah cita rasa. Dan juga penggantian bahan yang
awalnya menggunakan jeruk lemon menjadi jeruk nipis, bawang merah menjadi bawang bombay
● Merubah cara persiapan
● Pada ayam kecap lemon, ayam direbus terlebih dahulu menggunakan air garam sedangkan pada ayam kecap saus
tiram ayam langsung di goreng setengah matang baru ditumis bersamaan dengan bumbu yang telah dihaluskan.
● Merubah tekstur
Setelah dimodifikasi, ayam kecap saus tiram memiliki tekstur lebih renyah.

b.Tujuan modifikasi : meningkatkan daya terima, cita rasa makanan, dan merubah tekstur.

c. Modifikasi Resep
● Nama resep lama : Ayam Kecap Lemon
● Nama resep baru : Ayam Kecap Saus Tiram
● Cara persiapan : daging ayam dibersihkan → ayam digoreng setengah matang → kemudian tumis bumbu yang
sudah dihaluskan→ bumbu ditumis sampai harum → masukkan saus tiram,saus sambal,kecap manis dan air →
masukkan ayam → masak sampai kuah mengental
● Cara pemasakan : Ayam digoreng setengah matang, lalu ditumis bersamaan dengan bumbu

Bahan dan Bumbu Ayam Kecap Lemon
● Bumbu yang dihaluskan:
● 5 siung bawang merah

● Ayam 500 gr ● 3 buah cabai merah
● ½ butir lemon ● 1 ruas kunyit
● Minyak goreng 18 gr ● 1 ruas jahe
● Air 200 ml ● 1 sdt ketumbar
  ● ½ sdt merica
● Garam secukupnya
● Sedikit gula
● 6 sdm kecap manis
● 3 cm lengkuas
● 1 bungkus kaldu ayam
● 1 batang serai
● 3 lbr daun jeruk
● 200 ml air
Cara Membuat Ayam Kecap Lemon

● Cuci bersih daging ayam,


kemudian rebus dengan air ● Tumis beberapa saat, kemudian

● 20 lmbr daun jeruk
Cara Membuat
