Space Management
y Space organization means assigning space to an activity and

systematically arranging all the materials required for it


y Thus, the important aspects of space organisation arey allotting space for the activity y making available on the spot all that is required for the activity y arranging systematically all the materials and equipment

required for the activity


y Such an arrangement for storage is termed as functional

storage

Purpose
y To study : y Effective Space Utilization In a Restaurant y How a restaurant and a daily need shop is working and

serving its customers throughout the day y How do customers find that place y Management Of human resources(employees and Customers) in that place

Introduction: Gulshan & Snow Point


y Established In 1965 y Snow Point came later in 1988 y Tibbs Frankie started a month back y Area :1000 sq feet(approx) y No. Of Employees: 25(including waiters) y Timings: Daily 9 am to 11 pm

Observations: Seating Arrangement


y 11 tables inside Gulshan:
y 5 round tables(4 seater) y 4 rectangular tables(6 seater) y 2 square tables(4 seater)

y 9 tables (Plastic tables) in Snow Point (All are 4 seater) y Use of 5 round tables is a good idea as it reduces the space

occupied and can accommodate more number of people in an effective manner

y At Snow Point the square tables can be combined if there is a

large group sitting together y There are 2 entrances as well as exits for Snowpoint y The billing counter is at the inside corner

Recommendations
y At Gulshans :
y If the larger rectangular tables are replaced by smaller round

tables then:

More people can be seated Will create more walking space (to move from one table to another)

At Snow Point:
The corner two square tables when combined doesnt leave space for people to sit comfortably ( 2 more people could have been accomodated)

So those two square tables can be replaced by one large round table

Service constraints - Human


y The table to waiter ratio in Gulshan is 11:4 y This ratio is quite good for providing timely service to

customers y The table to waiter ratio in Snowpoint is 9:1 y This ratio increases the waiting time for customers

Service constraints - Infrastructure


y The height of the road facing counter of Gulshan is very high y This makes it very difficult to serve customers
