Fats are solid if they do not melt at ambient temperatures. The general
rule is: the more saturated the fat and the longer the chain, the harder the fat and the higher the melting point. Coconut oil has a melting point of 25 - 29C. Local ambient condition is at 26 - 32C while internal body temperature is at 34C. Thus, coconut oil may occasionally appear as a cloudy liquid. Nevertheless, its 90% saturated fatty acids is comprised mostly of medium and short chains that melt very easily.
2. Are all hard fats unhealthy and do they clog the arteries? Saturated fatty acids tend to be hard or solid in cold conditions compared to unsaturated fatty acids since these are straight chain structures that can pack together into a solid, crystalline form. However, all fats contain a mixture of both saturated and unsaturated fatty acids. In the case of Coconut oil, around 90% of it is saturated fatty acids so it really has the tendency to solidify or cloud. But majority of its saturated fatty acids is medium and short chains that have lower melting points and are not deposited to any extent in the adipose tissue.
Coconut oil is uniquely rich in medium chain triglycerides MCT (C8 C12). MCT is quickly converted to energy since the distribution has a shorter route via portal circulation from the intestine direct to the liver. Thus, it is the most easily digested and absorbed fat that does not circulate in the blood stream and is not stored.
This is why dietary Coconut oil does not lead to high serum cholesterol or to coronary heart disease. It even lowers cholesterol to normal by hastening its conversion to PREGNENOLONE, an anti-oxidant, anti-seizure and anticancer hormone. Moreover, the predominant Lauric acid is the precursor for MONOLAURIN, which has antimicrobial properties that can inhibit various microorganisms especially viruses by disrupting their lipid membranes
