Antosianin dapat menggantikan penggunaan pewarna
sintetik rhodamin B, carmoisin, dan amaranth sebagai 01
pewarna merah pada produk pangan

EFCA (Joint FAO/WHO Expert Committee on Food

Additives) telah menyatakan bahwa ekstrak yang 02
mengandung antosianin memiliki efek toksisitas yang
rendah

Antosianin merupakan senyawa flavonoid yang memiliki

Pengertian Antosianin

Antosianin adalah tutrunan struktur aromatic

tunggal, senyawa ini bersifat amfoter, yaitu

memiliki kemampuan untuk bereaksi baik

dengan asam maupun dengan basa. Dalam

media asam antosianin berwarna merah, dan

pada media basa berubah menjadi ungu dan

biru.
 Karakteristik Antosianin
1. Larut dalam air
2. Secara alami terdapat dalam anggur, strawberry,
raspberry, apel, dan bunga ros
3. Berwarna merah, biru dan violet
4. Pada pH rendah antosianin akan berwarna merah
dan pada pH tinggi akan berwarna violet atau biru
5. Pada konsnetrasi encer antosianin berwarna biru
dan pada konsnetrasi pekat akan berwarna merah
6. Dengan ion logam, antosianin membentuk senyawa
kompleks berwarna abu-abu violet
 pH Suhu
Suhu yang panas menyebabkan
Antosianin lebih stabil dalam larutan asam
kerusakan struktur antosianin
daripada dalam larutan basa

PENGERTIAN PEWARNA MAKANAN

Pewarna makanan merupakan salah satu zat aditif

makanan yang dapat diperoleh melalui alam maupun
sintesis, dan merupakan faktor sensori yang dipakai
manusia untuk menilai kualitas suatu produk makanan.
MENGAPA SUATU MAKANAN DAPAT
BERWARNA?
1. Pigmen yang secara alami terdapat pada tanaman
dan hewan.
2. Reaksi karamelisasi yang membentuk warna coklat.
3. Warna gelap yang ditimbulkan karena adanya reaksi
Maillard
4. Reaksi antara senyawa organik dengan udara akan
menghasilkan warna hitam atau coklat gelap.
5. Penambahan zat warna, baik zat warna alami maupun
zat warna sintetik.
FUNGSI PEWARNA MAKANAN

1. Memperbaiki penampakan dari makanan yang

warnanya memudar.
