Pengaruh Injeksi Antemortem Ekstrak Buah Nanas Terhadap Kualitas Daging Ayam Petelur Afkir pada Otot yang Berbeda. Dibawah bimbingan Effendi Abustam sebagai pembimbing utama dan Hajrawati sebagai pembimbing anggota. Penelitian ini bertujuan mengetahui efek terhadap kualitas daging yang dapat ditimbulkan pada ayam petelur afkir dari injeksi ekstrak buah nanas dengan level yang berbeda pada jenis otot yang berbeda. Materi penelitian adalah ayam petelur afkir umur 86 minggu, ekstrak buah nanas. Rancangan penelitian yang digunakan adalah rancangan acak lengkap pola faktorial 2 x 4 dengan tiga kali ulangan. Faktor A adalah jenis otot(A1 = otot dada, A2 = otot paha, faktor B adalah level injeksi (B1 = 0 ml/kg, B2 = 1 ml/kg, B3 = 2 ml/kg, B4 = 3 ml/kg). Parameter yang diamati yakni daya ikat air, daya putus daging dan susuk masak. Hasil penelitian menunjukkan bahwa level injeksi tidak berpengaruh (P>0,05) terhadap nilai daya putus daging, daya ikat air dan susuk masak. Hasil penelitian ini menyimpulkan bahwa Tidak ada pengaruh antara otot dada dan paha yang diinjeksi ekstrak buah nanas terhadap nilai daya putus daging, daya ikat air dan susuk masak pada ayam petelur afkir, level injeksi dengan konsentrasi optimal menyebabkan perbedaan nilai daya putus daging, daya ikat air dan susuk masak.level injeksi dan jenis otot yang berbeda tidak menunjukkan interaksi antara keduanya, artinya kedua faktor bekerja secara independen.

This study aims to determine the effect on the quality of meat that can be inflicted on laying chickens culled of the pineapple extract injection with different levels in different types of muscle.
