Racun adalah suatu zat yang
kemampuan untuk merusak sel dan
sebagian fungsi tubuh secara tidak normal
(Arisman, 2009)

Junaidi(2011) menyatakan keadaan darurat

yang diakibatkan masuknya suatu zat atau
makanan ke dalam tubuh melalui mulut
yang mengakibatkan bahaya bagi tubuh
disebut sebagai keracunan makanan.

Perez dan Luke’s (2014)

menyatakan keracunan makanan adalah
keracunan yang terjadi akibat menelan
makanan atau air yang mengandung
 ETIOLOGI

Keracunan makanan dapat disebabkan oleh

pencemaran bahan-bahan kimia beracun, kontaminasi zat-zat kimia,
mikroba,bakteri, virus dan jamur yang masuk ke dalam tubuh manusia
(Suarjana, 2013).

Di Indonesia ada beberapa jenis makanan yang sering mengakibatkan

keracunan antara lain:
1. Keracunan botulinum
2. Keracunan bongkrek
3. Keracunan jamur
4. Keracunan jengkol
5. Keracunan ikan laut
6. Keracunan singkong
7. Dan lain-lain
