Industri pengolahan ikan telah meningkat. Semakin meningkatnya industri
pengolahan perikanan, semakin meningkat pula limbah yang dihasilkan. Salah satunya adalah limbah pengolahan pabrik surimi berupa kepala, sirip, ekor, tulang, sisik, dan lainnya. Salah satu cara menangani limbah tersebut adalah dijadikan tepung ikan. Tepung ikan termasuk salah satu pengolahan limbah yang potensial, sehingga perlu untuk mempelajari proses pengolahan tepung ikan dari limbah pengolahan pabrik surimi secara langsung. Tujuan Pratek Kerja Lapang adalah mengetahui secara langsung pembuatan tepung ikan dari limbah pengolahan pabrik surimi beserta kandungan tepung ikan dan analisis usaha industri pembuatan tepung ikan di PT. Starfood International, Lamongan, Jawa Timur. Praktek Kerja Lapang telah dilaksanakan di PT. Starfood International, Jalan Deandels Km 76, desa Kandang Semangkon, kecamatan Paciran, kabupaten Lamongan, provinsi Jawa Timur. Metode kerja menggunakan metode deskriptif dengan pengambilan data melalui partisipasi aktif, observasi, dan wawancara. Hasil Praktek Kerja Lapang menunjukkan pembuatan tepung ikan dari limbah pengolahan pabrik surimi meliputi penerimaan bahan baku, pemanasan boiler, pemasakan, pengeringan I, pengeringan II, pendinginan, penggilingan dan penyaringan, pengemasan, penyimpanan, dan pemasaran. Hasil pengujian mutu menunjukkan tepung ikan dari limbah pengolahan pabrik surimi masuk spesifikasi Mutu I dan Mutu III. Analisis usaha industri tepung ikan dari limbah pengolahan pabrik surimi menunjukkan telah memenuhi kriteria untuk dinyatakan layak berdiri.

The fish processing industry has increased. Increasingly the fishery
processing industry, also increase the waste produced. One of them is waste of processing surimi factory in the form of the head, fins, tail, bones, scales, and others. One way to handle this waste is used as fishmeal. Fishmeal including one of potential waste treatment, so it is necessary to study the process of making fishmeal from waste of processing surimi factory, directly. Purpose of Field Work Practice (PKL) is knowing directly making fishmeal from the waste of processing surimi factory and the content of fishmeal and business analysis of fishmeal industry at PT. Starfood International, Lamongan, East Java. Field Work Practice was carried out at PT. Starfood International, Jl. Deandels Km 76, Kandang Semangkon, Paciran, Lamongan, East Java Province. The working method used was descriptive method by collecting data through active participations, observations, and interview. Results of Field Work Practice demonstrates that the process of fishmeal from waste of processing surimi factory involve acceptance of raw materials, heating boiler, cooking, drying I, drying II, cooling, grinding and filtering, packaging, storage, and marketing. The test result shows that the quality of fishmeal from waste of processing surimi factory include specification Quality I and Quality III. Business analysis of fishmeal industry from waste of processing surimi factory shows have met the criteria to be declared worthy.
