ABSTRAK
Pada perkembangan industri saat ini, pengendalian kualitas produk semakin
menjadi perhatian khusus bagi para pelaku industri. Pengendalian kualitas produk
merupakan strategi perusahaan untuk bisa lebih kompetitif pada persaingan
industri yang ada. PT. Sekar Laut, Tbk. bergerak pada industri pengolahan
kerupuk seperti kerupuk udang, kerupuk ikan, dan kerupuk sayur, serta produk
pendamping berupa saus dan bumbu-bumbu. PT. Sekar Laut, Tbk. mengalami
permasalahan pada kualitas produk yang dihasilkan, dimana persentase tingkat
cacat produk dari produk yang dihasilkan diatas standar yang telah ditetapkan
perusahaan yakni sebesar 4%. Sehingga perusahaan perlu melakukan
pengendalian kualitas dari produk yang dihasilkan untuk mengurangi tingkat cacat
produk agar sesuai dengan standar atau bahkan mendekati zero defect.

Penelitian ini menggunakan metode Define, Measure, Analyze, Improve, Control

(DMAIC) Six Sigma yang berfokus pada analisis faktor cacat produk dan
perancangan pengendalian kualitas produk kerupuk dengan merek Finna. Dari
penelitian ini diharapkan dapat menjadi solusi dan pertimbangan dalam
pengendalian kualitas produk yang dihasilkan perusahaan. Dengan pendekatan
kualitatif, penelitian ini menggunakan data primer dan data sekunder.

Hasil dari penelitian ini, didapatkan bahwa dari produksi kerupuk terdapat 7 jenis
cacat yang menjadi Critical to Quality (CTQ) kunci yaitu cacat tebal tipis, cacat
lubang, cacat pecah, cacat lengket, cacat under cooked, cacat bantat, dan cacat
benda asing. Dengan menggunakan Cause and Effect Diagram dan perhitungan
Failure Mode Effect Analysis (FMEA) didapatkan penyebab terjadinya cacat
produksi dari produk yang dihasilkan dan mencari akar penyebab permasalahan
yang kemudian menentukan prioritas alternatif perbaikan untuk mengurangi
tingkat cacat produk. Sehingga hasil alternatif perbaikan dapat menjadi solusi
dalam proses produksi, serta alternatif perbaikan tersebut dapat dijadikan standar
dalam proses produksi di perusahaan.

ABSTRACT

In the latest industrial development, product quality control becomes a major attention to
several industrialists. It is one of the strategies done by the company to be more
competitive in the industrial competition exist. PT. Sekar Laut, Tbk. runs in chips
(kerupuk) processing industry such as shrimp chips, fish chips, and vegetables chips, also
side products like sauces and spices. It faces a major problem in the product quality,
where the percentage of defect product is higher than the standard defined by the
company, which is only 4%. Therefore, the company needs to control the quality of the
final products to diminish defect product level so that it could be in the same level as the
standard or even close to zero defects.

This study used Define, Measure, Analyze, Improve, Control (DMAIC) Six Sigma
method focusing on the factor analysis of defect products and the design of product
quality control in Finna brand. The result of this study hopefully became solution or
consideration in the product quality control of the company. Using qualitative approach,
this study used primary and secondary data.

The result of this study showed that there are seven types of defects from the chips
production which belonged to Critical to Quality (CTQ) such as thick-thin defect, cavity
defect, smashed defect, sticky defect, under-cooked defect, fail-risen defect, and
unidentified object defect. Using Cause and Effect Diagram and Failure Mode Effect
Analysis (FMEA) calculation, the causes of defect products were found by identifying the
root causes of production problem and defining the alternative improvement priority to
reduce defect product level. Hence, the result of alternative improvement could be
solution and standard in production process of the company.
