Pendahuluan
Telur bebek merupakan salah satu sumber protein
hewani yang memiliki rasa yang sangat lezat,
mudah dicerna dan bergizi tinggi. Untuk
mengetahui kualitas dari telur bebek itu sendiri
dapat dilakukan dengan pengamatan secara
eksterior maupun interior

 Pembahasan

Telur yang baik, dilihat dari pengamatan ekterior meiliki tektus

kerabng yang kokoh, bersih, dan diameter lebar serta panjang yang
besar, indeks telur yang besar, jika di urutkan dari sampel yang
terbaik adalah 001, 003, 002, dan 004. Sedangkan jika dilihat dari
interior telur yang baik memiliki nilai tinggi di indeks yolk, indeks
albumin dan warna yolk, dan hauhgh unit, jika di urutkan dari sampel
yang terbaik adalah 001, 002, 003&004. Parameter lain yang diamti
yaitu pH yang terbaik berkisar antara 6.8-7.9 dan rongga sebesar 3-5
mm menurut ( Susilo, J. 2017 ; Stiqomah eat all 2018)
 Kesimpulan
Praktikum ini dilaksanakan dengan mengamati sampel telur bebek yang berjumlah 4 sampel dengan tiap
praktikan mengamati 1 sampel. Berdasarkan hasil pengamatan eksterior dan interior tiap praktikan
mendapatkan hasil yang berbeda-beda. Indeks telur yang kami amati menghasilkan nilai sebesar 80 dan 90%
yang ditinjau berdasarkan pengamatan eksterior. Bedasarkan hasil pengamatan interior juga menunjukan
perbedaan pada tiap sampelnya, kecuali pada parameter diameter kuning telur menunjukan hasil yang sama
pada setiap sampel. Hasil pengkuran diameter kuning telur keempat sampel yaitu sebesar 4 cm dengan hasil
Indeks putih telur masing-masing memiliki nilai 5.65%, 6.48%, 4%, 5.7%, dan hasil indeks kuning telur masing
masing memiliki nilai 42.5%, 50%, 37.5%, dan 37.5%.
Telur yang baik, dilihat dari pengamatan ekterior memiliki tekstur kerabang yang kokoh, bersih, dan
diameter lebar serta panjang yang besar dan juga nilai indeks telur yang besar. Mengacu pada ciri kualitas telur
yang baik, maka urutan dari sampel telur bebek yang terbaik berdasarkan pengamatan ini adalah 001, 003,
002 dan 004. Parameter lain berupa pH yang terbaik berkisar antara 6.8-7.9 dan rongga sebesar 3-5 mm,
maka jika di urutkan dari sampel telur bebek yang terbaik adalah 001, 002, 003&004.
