ENERGY GEL SUMBER KARBOHIDRAT DAN ANTIOKSIDAN UNTUK


OLAHRAGA ENDURANCE DENGAN BAHAN DASAR UBI JALAR (Ipomoea
batatas (L). Lam) cv. CILEMBU DAN JAMBU BIJI MERAH (Psidium guajava L.)

Latar Belakang : Atlet dan olahragawan endurance membutuhkan asupan karbohidrat


yang cukup selama pertandingan untuk mempertahankan kadar glukosa darah tetap
normal. Energy gel merupakan salah satu bentuk suplemen makanan tinggi energi yang
sering digunakan oleh atlet endurance.
Tujuan Penelitian: Mengetahui kandungan gizi dan daya terima energy gel dengan
bahan ubi jalar cilembu dan jambu biji merah.
Metode: Jenis penelitian eksperimental dengan Rancangan Acak Lengkap (RAL).
Energy gel terdiri dari 4 formula yaitu T601 (100% ubi jalar cilembu), T602 (90% ubi
jalar cilembu dan 10% jambu biji merah), T603 (70% ubi jalar cilembu dan 30% jambu
biji merah) serta T604 (50% ubi jalar cilembu dan 50% jambu biji merah). Uji daya
terima dilakukan pada panelis semi terlatih dan analisis nilai gizi meliputi uji proksimat
dan aktivitas antioksidan.
Hasil Penelitian: Berdasarkan uji daya terima yang dilakukan terhadap panelis diketahui
bahwa produk T604 merupakan formula yang paling disukai dari segi rasa, aroma, warna
dan tekstur. Berdasarkan nilai gizinya, Kadar abu tertinggi terdapat pada T603 yaitu
0.31%, kadar air tertinggi terdapat pada T604 yaitu 81.71%, kadar lemak tertinggi
terdapat pada T603 yaitu 0.37%, kadar protein tertinggi terdapat pada T604 yaitu 4.61%
dan kadar karbohidrat tertinggi terdapat T601 sebesar 17.47%. Aktivitas antioksidan
tertinggi terdapat pada T604 dengan nilai IC50 sebesar 12.7747 mg/mL (kategori
moderat).
Kesimpulan: Produk yang paling disukai panelis adalah T604 dengan nilai karbohidrat
13.07%, lemak 0.37%, protein 4.61% dan aktivitas antioksidan 12.77 mg/mL.
Penambahan jambu biji merah berpengaruh secara bermakna terhadap rasa, warna, aroma
dan tekstur energy gel ubi jalar cilembu.

Background: Athlete and endurance sport enthusiast need to consume adequate


carbohydrate while the race to maintaining a normal blood glucose. Energy gel is one of
food supplement which containing high energies and often used by endurance athlete.
Research Purpose: To know the nutrition content and the accaptance of energy gel from
sweet potato cilembu and guava.
Methode: The type of this research is experimental study with complete randomized
design (RAL). Energy gel made into 4 formula: T601 (100% sweet potato cilembu), T602
(90% sweet potato and 10% guava), T603 (70% sweet potato cilembu and 30% guava)
and T604 (50% sweet potato cilembu and 50% guava). The acceptance test was
performed to semi-trained panelist and nutrition value test was covered proximate and
antioxidant activity test.
Result: The acceptance test found that formula 3 or T604 is the most preferred formula in
terms of taste, flavor, colour and texture. Based on nutrition content analisys, the highest
of ash content is on T603 0.31%, the highest of water content is on T604 81.71%, the
highest of fat content is on T603 0.37%, the highest of protein content is on T604 4.61%
and the highest carbohydrate content is on T601 17.47%. The highest antioxidant activity
IC50 is on T604 12.77 mg/mL (moderate category).
Conclusion: The most preferred formula is T604, containing 13.07% carbohydrate,
0.37% fat, 4.61% protein and antioxidant activity 12.77 mg/mL. The increasing of guava
percentage in formula has a significant difference in terms of taste, flavor, colour and
texture.
