 PENGENALAN
Teknologi makanan ialah cabang sains makanan yang menangani proses
pengeluaran yang membuat makanan.

Penyelidikan saintifik awal mengenai teknologi makanan tertumpu pada

pengawetan makanan. Perkembangan Nicolas Appert pada tahun 1810 dari
proses pengetinan adalah peristiwa yang menentukan. Proses itu tidak disebut
pengetinan dan Appert tidak mengetahui prinsip di mana prosesnya berjalan,
tetapi pengetinan telah memberi kesan besar pada teknik pengawetan
makanan.

Penyelidikan Louis Pasteur mengenai kerosakan anggur dan penerangannya

tentang bagaimana mengelakkan kerosakan pada tahun 1864 adalah usaha awal
untuk menerapkan pengetahuan saintifik untuk pengendalian makanan.
