 LATAR BELAKANG

Ikan lele (Clarias gariepinus) merupakan jenisikan air tawar yang banyak digemari masyarakatkarena rasanya enak dan memiliki
kandungangizi yang cukup tinggi. Kelebihan ikan lele adalah memiliki kemampuan beradaptasi yang cukuptinggi terhadap
kondisi lingkungan dan pertumbuhan yang sangat cepat (Zulisyanto et al. 2016).
Ikan lele dapat menjadi salah satu pilihan yang dapat diolah menjadi makanan praktis danbergizi bagi balita. Lele utuh
mengandungprotein sebesar 12,82%, lemak sebesar 3,70%,abu sebesar 2,70%, karbohidrat sebesar 2,60%,dan kalsium sebesar
5,59% (Handayani & Kartikawati 2015).
Daging lele mudah untukdiolah menjadi berbagai produk antara lainnugget, abon, dan stik.Konsumsi kalsium masyarakat
Indonesia ratarata hanya sebesar 254 mg per hari. Kebutuhankalsium yang dianjurkan menurut PeraturanMenteri Kesehatan No.7
tahun 2013 adalah 1.000–1.200 mg/hari (Kemenkes 2013). Konsumsi kalsium yang kurang dapat menyebabkan kerusakan gigi,
gangguan pertumbuhan tulang,dan darah sukar membeku. Salah satu sumber kalsium yang dapat dimanfaatkan yaitu tulangikan.
Komponen utama penyusun tulang ikan lele di antaranya kalsium sebesar 21–25%, fosforsebesar 10–lele di antaranya kalsium
sebesar 21–25%, fosforsebesar 10–11%, danlemak sebesar 7%(Bechtel et al. 2018). Bagian tulang lele yang tinggi kalsium,
fosfor, dan mineral lainnya dapat dimanfaatkan menjadi produk seperti kerupuk, keripik tempe,dan biskuit. Pemanfaatan hasil
samping berupatulang lele menjadikan diversifikasi ikan lele yang zero waste
 MANFAAT DAN TUJUAN
Manfaat dari inovasi olahan ikan lele ini adalah:
1. Meningkatkan inovasi olahan pangan
berbasis zero waste.
2. Meningkatkan daya beli Masyarakat.
3. Meningkatkan kreativitas Masyarakat
dalam menciptakan produk baru.
Tujuan dari inovasi olahan ikan lele adalah
diharapkan produk olahan ini dapat diterima di
masyarakat dan mendapat respon positif dari
masyarakat untuk kedepannya, serta diharapkan
bisa menambah penghasilan bagi para
wirausahawan.
 ALAT DAN BAHAN
Alat : Bahan :
1. Wajan 1. 250 gr daging ikan lele
2. Loyang 2. 2 suing bawang putih
3. Panci 3. 50 gr tepung tapioca
4. Spatula 4. 1 sdm susu bubuk
5. Mangkuk 5. 1 sdt garam
6. 1 butir telur
7. Margarin

Bahan pelapis :
8. 1 butir telur (ambil putihnya)
9. Tepung roti secukupnya
 CARA PEMBUATAN

1. Campurkan ikan lele, parutan bawang putih, telur, tepung tapioca, garam dan susu bubuk. Aduk merata menggunakan
spatula.
2. Tuangkan adonan ke dalam Loyang yang sudah diolesi dengan margarin.
3. Kukus selama 20 menit sampai matang dan dinginkan, lalu bentuk nugget ikan lele sesuai selera.
4. Celupkan nugget ikan lele ke dalam putih telur, lalu balur dengan tepung roti hingga semua terlapisi diseluruh permukaan.
5. Masukkan ke freezer untuk hasil yang lebih bagus.
6. Goreng dalam minyak panas sampai kuning kecoklatan, angkat dan tiriskan.
KENDALA

Kendala dalam pembuatan nugget ikan lele ini adalah susahnya membudidaya ikan lele saat cuaca sekarang, lele juga
membutuhkan kolam air tawar yang luas dan nyaman untuk bertumbuh kembang. Peralatan yang sederhana juga menghambat
kelancaran membuat nugget serta sumber daya manusia yang tidak semua orang bisa membuat olahan ini.
