DRYING (PENGERINGAN)

 PENGERTIAN
Merupakan proses penurunan kandungan air suatu bahan
sampai kadar yang diinginkan melalui operasi pindah panas
dan pindah massa yang terjadi secara simultan.

Pengeringan (drying) zat padat berarti pemisahan sejumlah


kecil air atau zat cair lain dari bahan padat, sehingga
mengurangi kandungan sisa zat cair di dalam zat padat itu
sampai suatu nilai terendah yang dapat diterima.

 KONSEP PENGERINGAN
Proses pengeringan merupakan proses perpindahan panas dari
sebuah permukaan benda sehingga kandungan air pada
permukaan benda berkurang.
Perpindahan panas dapat terjadi karena adanya perbedaan
temperatur yang signifikan antara dua permukaan.
Perbedaan temperatur ini ditimbulkan oleh adanya aliran udara
panas diatas permukaan benda yang akan dikeringkan yang
mempunyai temperatur lebih dingin.

 FAKTOR-FAKTOR YANG MEMPENGARUHI PENGERINGAN


1. Luas permukaan bahan
Pada umumnya, bahan yang dikeringkan mengalami pengecilan
ukuran, baik dengan cara diiris, dipotong, atau digiling.
Proses pengecilan ukuran dapat mempercepat proses pengeringan
dengan mekanisme sebagai berikut :
a. Pengecilan ukuran memperluas permukaan bahan.
Luas permukaan bahan yang besar atau ukuran bahan yang
semakin kecil menyebabkan permukaan bahan dapat kontak
dengan medium pemanas menjadi lebih baik,

b. Luas permukaan yang besar menyebabkan air lebih mudah
berdifusi atau menguap dari bahan sehingga kecepatan
penguapan air lebih cepat dan bahan menjadi lebih cepat
kering.

c. Ukuran bahan yang kecil menyebabkan penurunan jarak


yang harus ditempuh oleh panas (Panas harus bergerak
menuju pusat bahan yang dikeringkan).
Demikian juga jarak pergerakan air dari pusat bahan ke
permukaan bahan menjadi lebih pendek.

2. Perbedaan suhu
Pada umumnya, semakin besar perbedaan suhu antara
medium pemanas dengan bahan semakin cepat perpindahan
panas ke bahan dan semakin cepat pula penguapan air dari
bahan.
Semakin tinggi suhu udara, semakin banyak uap air yang dapat
ditampung oleh udara tersebut sebelum terjadi kejenuhan.

Udara bersuhu tinggi lebih cepat mengambil air dari bahan


sehingga proses pengeringan lebih cepat.

3. Kecepatan aliran udara


Udara yang bergerak atau bersirkulasi akan lebih cepat
mengambil uap air dibandingkan udara diam.
Pada proses pergerakan udara, uap air dari bahan akan diambil
dan terjadi mobilitas yang menyebabkan udara tidak pernah
mencapai titik jenuh.
Semakin cepat pergerakan atau sirkulasi udara, proses
pengeringan akan semakin cepat.
Prinsip ini yang menyebabkan beberapa proses pengeringan
menggunakan sirkulasi udara.

4. Kelembaban Udara
Kelembaban udara menentukan kadar air akhir bahan setelah
dikeringkan.
Bahan yang telah dikeringkan dapat menyerap air dari udara di
sekitarnya.
Jika udara disekitar bahan kering tersebut mengandung uap air
tinggi atau lembab, maka kecepatan penyerapan uap air oleh
bahan tersebut akan semakin cepat.
Proses penyerapan akan terhenti sampai kesetimbangan
kelembaban nisbi bahan tersebut tercapai.
Kesetimbangan kelembaban nisbi bahan adalah kelembaban pada
suhu tertentu dimana tidak terjadi penguapan air dari bahan ke
udara dan tidak terjadi penyerapan uap air dari udara oleh bahan.

5. Lama Pengeringan
Lama pengeringan menentukan lama kontak bahan dengan panas.
Untuk bahan yang sensitif terhadap panas maka pengeringan yang
digunakan harus maksimum, yaitu kadar air bahan akhir yang
diinginkan telah tercapai dengan lama pengeringan yang pendek.
Pengeringan dengan suhu yang tinggi dan waktu yang pendek
dapat lebih menekan kerusakan bahan dibandingkan dengan
waktu pengeringan yang lebih lama dan suhu lebih rendah.
Misalnya, jika kita akan mengeringkan kacang-kacangan,
pengeringan dengan pengering rak pada suhu 80oC selama 4 jam
akan menghasilkan kacang kering yang mempunyai kualitas yang
lebih baik dibandingkan penjemuran selama 2 hari.

 KLASIFIKASI PENGERING (DRYER) (Mc. Cabe, 2002)
1. Direct dryer, zat yang dikeringkan bersentuhan
/ kontak langsung dengan gas panas (udara panas),
disebut convection dryer.

2. Indirect dryer, panas untuk pengeringan dipindahkan ke


bahan melalui dinding pembatas/pemisah yang biasanya
dari logam,
disebut conduction dryer

 JENIS ALAT PENGERING
Pemilihan jenis pengering ditentukan oleh:
– kualitas produk akhir yang diinginkan,
– sifat bahan yang dikeringkan,
– biaya produksi atau pertimbangan ekonomi.

1. Pengering untuk Zat Padat


a. Rotary Dryer
Alat pengering ini berbentuk silinder yang bergerak pada
porosnya. Silinder dihubungkan dengan alat pemutar dan
letaknya agak miring. Permukaan dalam silinder dilengkapi
dengan penggerak bahan yang berfungsi untuk mengaduk
bahan.Udara panas mengalir searah dan dapat pula
berlawanan arah dengan jatuhnya bahan kering pada alat
pengering.

• Operating Principle
Hot air at desired temprature and flow rate is made to
flow through the tumbling bed of wet feed. The wet
material gets progressively dried to the final level of
desired moisture and exits at the discharge end. The
humid air carrying moisture transferred from the drying
material is exhausted via a dust separator.

Drier and accessories are assembled with or without
skid mounting and tested to minimize installation
expenses. System designed for drying products or by-
products containing excess moisture. Rotary driers can

Lapisan bahan yang akan dikeringkan diangkut perlahan-lahan

c. Tower Dryer
Pengering menara terdiri dari sederetan talam bundar yang
dipasang bersusun ke atas pada suatu poros tengah yang
berputar. Zat padat itu menempuh jalan seperti melalui
pengering, sampai keluar sebagai hasil yang kering dari dasar
menara.

Pengering konveyor screw adalah suatu pengering kontinyu

konveyor screw horizontal (konveyor dayung) yang terletak di
dalam selongsong bermantel berbentuk silinder.

e. Alat Pengering Tipe Rak (Tray Dryer)


Tray dryer atau alat pengering tipe rak, mempunyai bentuk
persegi dan di dalamnya berisi rak-rak, yang digunakan sebagai
tempat bahan yang akan dikeringkan.
TRAY DRYER

A tray or Compartment Dryer is an enclosed insulated chamber in which trays are


placed on top of each other in trolleys. The material to be dried either wet or solids
are placed in the trays. Heat transfer is by circulation of hot air by electric heaters or
steam in radiator coils. Blower fans are installed inside to ensure proper circulation
and transfer of heat. A control panel to control the temperature and other parameteres
is fixed outside the dryer. These dryers are available in Mild Steel, Stainless Steel or
Al construction. Used for Drying of Pigments, Food, Bakery, Electrodes, Chemical
and Plastic Powders.

Flash Dryer
Designed to produce fine granular or powdered material. the
Drytec Flash Dryer uses a stream of turbulent hot air to dry
material in a continuous cycle, evaporating water from the
particulates. Dispersed in the air these particles have a large
surface area enabling extremely high rates of heat and mass
transfer to be achieved. Rapid evaporation during the
process cools the air to minimise damage to sensitive
materials.

Drytec Ring and Flash Dryers are ideal for drying filter cakes,
fibrous materials, sludges and particulates.

Open system

Featuring atmospheric air in a once-through system where


water is to be removed. Normally a push-pull system is used to
balance the pressure to be slightly negative in the free board of
the fluid bed. Depending upon the product and available heat
source, direct or indirect heating may be applied. The exhaust
air is cleaned by e.g. bag filter, cyclone with or without wet
scrubber. In cases where products pose a dust explosion risk,
open cycle systems feature pressure shock resistant
components or alternatively semi-closed cycle, self-inertizing
layouts can be considered.

Closed cycle system

Featuring drying in an inert gas atmosphere (usually


nitrogen) recycling within the system. It must be used for
drying feedstocks containing organic volatiles or where the
product must not contact oxygen during drying.Closed cycle
systems are gastight, and addition of inert gas is controlled
by monitoring the oxygen content of the drying gas and the
system pressure, which is kept positive. The evaporated
volatiles are recovered in a condenser.

OPERATION:
Due to induced draft created by specially
designed heavy duly fan the atmospheric
air is drawn through the 5 micron air filter.
The filtered air is then heated to the
required temperature by electric heaters /
stream radiator. The hot air passes

Spray Dryer
• Principle
Spray Dryer is a machine that can get powder shape dried stuff
in once time from solution, emulsion, suspension and etc.
The air is heated by the burner then it enters into the hot-air
distributor evenly on the top of drying chamber, then into the
chamber accompanying with helical rotating. At the same time,
the material liquid passes through the rotary pan or pressure
nozzle to mist spray on the top of chamber. The material will be
become the finished products in a very short time because the
spray drops to be contacted heat windy and then vapor fast.
Using this drying method can leave out more processes than
others, such as concentration, filtration, grinding, and etc. so to

• Operating Principle
This drum dryer is basically a conduction
dryer. Wet feed film (in liquid or paste form) is
applied to the rotating metal cylinder inside
which, a heating medium is supplied. Material
film dries to the final moisture level and is
scraped off.

 The drum body of the drum dryer is heated on the inside by steam. A
special composition of cast iron gives the drum a combination of
favourable properties: very accurate shape retention even at high
steam pressure and temperature, and excellent "scraping properties",
which are utilised by the scraping knife.

 Steam heating gives a uniform temperature distribution over the drum


surface and this results in consistent product quality. The steam
condenses on the inside of the drying drum. The condensate is
continuously removed from the drum, so that the largest possible
surface area remains available on the inside of the drum for
condensation of the steam. The steam system is a closed system, which
means that the product cannot come into contact with the steam or

DRYING (PENGERINGAN)
1. Pengering untuk larutan atau bubur (slurry)
a. Spray Dyer (Pengering Semprot)
Pada proses pengeringan semprot, cairan disemprotkan melalui
nozel pada udara panas.
Pada spray dryer, bahan cair atau slurry dimasukkan lewat pipa
saluran yang berputar dan disemprotkan ke dalam jalur yang
berudara bersih, kering, dan panas dalam suatu tempat yang
besar, kemudian produk yang telah kering dikumpulkan dalam
filter kotak, dan siap untuk dikemas.
Ada dua tipe pengering semprot, yaitu
• tipe horizontal
• tipe vertical.
DRYING (PENGERINGAN)
b. Thin Film Dryer (Pengering Film Tipis)
Pengering film tipis dapat menghasilkan hasil padatan yang
kering dan bebas mengalir.
Efesiensi termal pengering film tipis biasanya tinggi dan
kehilangan zat padatnya pun kecil.
Alat ini relatif lebih mahal dan luas permukaan perpindahan
kalornya terbatas (Unair Thaib, dkk).
