PENGERTIAN
Merupakan proses penurunan kandungan air suatu bahan
sampai kadar yang diinginkan melalui operasi pindah panas
dan pindah massa yang terjadi secara simultan.
2. Perbedaan suhu
Pada umumnya, semakin besar perbedaan suhu antara
medium pemanas dengan bahan semakin cepat perpindahan
panas ke bahan dan semakin cepat pula penguapan air dari
bahan.
Semakin tinggi suhu udara, semakin banyak uap air yang dapat
ditampung oleh udara tersebut sebelum terjadi kejenuhan.
4. Kelembaban Udara
Kelembaban udara menentukan kadar air akhir bahan setelah
dikeringkan.
Bahan yang telah dikeringkan dapat menyerap air dari udara di
sekitarnya.
Jika udara disekitar bahan kering tersebut mengandung uap air
tinggi atau lembab, maka kecepatan penyerapan uap air oleh
bahan tersebut akan semakin cepat.
Proses penyerapan akan terhenti sampai kesetimbangan
kelembaban nisbi bahan tersebut tercapai.
Kesetimbangan kelembaban nisbi bahan adalah kelembaban pada
suhu tertentu dimana tidak terjadi penguapan air dari bahan ke
udara dan tidak terjadi penyerapan uap air dari udara oleh bahan.

5. Lama Pengeringan
Lama pengeringan menentukan lama kontak bahan dengan panas.
Untuk bahan yang sensitif terhadap panas maka pengeringan yang
digunakan harus maksimum, yaitu kadar air bahan akhir yang
diinginkan telah tercapai dengan lama pengeringan yang pendek.
Pengeringan dengan suhu yang tinggi dan waktu yang pendek
dapat lebih menekan kerusakan bahan dibandingkan dengan
waktu pengeringan yang lebih lama dan suhu lebih rendah.
Misalnya, jika kita akan mengeringkan kacang-kacangan,
pengeringan dengan pengering rak pada suhu 80oC selama 4 jam
akan menghasilkan kacang kering yang mempunyai kualitas yang
lebih baik dibandingkan penjemuran selama 2 hari.

• Operating Principle
Hot air at desired temprature and flow rate is made to
flow through the tumbling bed of wet feed. The wet
material gets progressively dried to the final level of
desired moisture and exits at the discharge end. The
humid air carrying moisture transferred from the drying
material is exhausted via a dust separator.

b. Screen Conveyor Dryer
Lapisan bahan yang akan dikeringkan diangkut perlahan-lahan
diatas logam melalui kamar atau terowongan pengering yang
mempunyai kipas dan pemanas udara.
c. Tower Dryer
Pengering menara terdiri dari sederetan talam bundar yang
dipasang bersusun ke atas pada suatu poros tengah yang
berputar. Zat padat itu menempuh jalan seperti melalui

Flash Dryer
Designed to produce fine granular or powdered material. the
Drytec Flash Dryer uses a stream of turbulent hot air to dry
material in a continuous cycle, evaporating water from the
particulates. Dispersed in the air these particles have a large
surface area enabling extremely high rates of heat and mass
transfer to be achieved. Rapid evaporation during the
process cools the air to minimise damage to sensitive

OPERATION:
Due to induced draft created by specially
designed heavy duly fan the atmospheric
air is drawn through the 5 micron air filter.
The filtered air is then heated to the
required temperature by electric heaters /
stream radiator. The hot air passes
through the product container and the
product gets dried by air fluidisation and
the air circulation is controlled by damper.
The filter bag prevents fine particles from

Spray Dryer
• Principle
Spray Dryer is a machine that can get powder shape dried stuff
in once time from solution, emulsion, suspension and etc.
The air is heated by the burner then it enters into the hot-air
distributor evenly on the top of drying chamber, then into the
chamber accompanying with helical rotating. At the same time,
the material liquid passes through the rotary pan or pressure
nozzle to mist spray on the top of chamber. The material will be
become the finished products in a very short time because the
spray drops to be contacted heat windy and then vapor fast.
Using this drying method can leave out more processes than

• Operating Principle

1. Pengering untuk larutan atau bubur (slurry)
a. Spray Dyer (Pengering Semprot)
Pada proses pengeringan semprot, cairan disemprotkan melalui
nozel pada udara panas.
Pada spray dryer, bahan cair atau slurry dimasukkan lewat pipa
saluran yang berputar dan disemprotkan ke dalam jalur yang
berudara bersih, kering, dan panas dalam suatu tempat yang
besar, kemudian produk yang telah kering dikumpulkan dalam
filter kotak, dan siap untuk dikemas.
Ada dua tipe pengering semprot, yaitu
