ABSTRACT
Red dragon fruit (H.polyrhizus) skin has a high antioxidant effectand is
also used effect as an antihyperglycemic and antihyperlipidemic agent. This study
aims to formulate red dragon fruit skin (H.polyrhizus) into jelly candy that have
more economic value and nutritional value The process of extracting red dragon
fruit skin was using the infusion method using the Indonesian National Standard.
The results showed that extracts of the red dragon fruit skin has 22,5% yield
extract. Extract of dragon fruit skin has 1.60% of water content, 17,4 % of ash
content, 27.7 % of water soluble extract content and 8,56% of solouble etanol
extract. Antioxidant activity of red dragon skin extract about IC50 3.85 gram/ml.
The characterization of jelly candy formula were fit to SNI standard.
