Pengertian
Nasi adalah olahan dari beras yang menjadi makanan pokok masyarakat
Indonesia. Beras merupakan sumber karbohidrat yang dapat diurai menjadi
partikel-partikel kecil dalam bentuk glukosa. Faktor-faktor yang
mempengaruhi perubahan glukosa nasi selama penyimpanan yaitu waktu
penyimpanan dan suhu penyimpanan. Glukosa diperoleh dari hidrolisis pati
sekitar 1250 molekul glukosa yang berperan menghasilkan energi dalam tubuh.
Proses tersebut dikenal dengan proses glikolisis dimana glukosa berperan
dalam produksi ATP (Adenosin Trifosfat) yang merupakan bentuk energi yang
diperlukan tubuh.
 Produk Olahan dari Nasi

Salah satu olahan dari nasi yaitu kerupuk karak merupakan jenis kerupuk yang
diolah dengan menggunakan bahan dasar dari beras atau nasi dengan penambahan
bleng dan bumbu-bumbu secukupnya hingga menghasilkan gendar. Kerupuk gendar
adalah produk pangan kering dari proses penggorengan, berbentuk lempengan tipis,
bulat atau persegi panjang,yang terbuat dari bahan dasar beras dengan berbagai cita
rasa tergantung bumbu-bumbu yang ditambahkan. Untuk menggantikan bleng dapat
digunakan STPP (Sodium Tripolyphosphate). STPP mampu menambah citarasa,
memperbaiki tekstur, mencegah terjadinya rancidity (ketengikan), dan meningkatkan
kualitas produk akhir dengan mengikat zat nutrisi yang terlarut dalam larutan garam
seperti protein, vitamin, dan mineral
 Kerusakan pada Nasi

Kerusakan yang terjadi pada nasi dapat disebabkan oleh pora Bacillus cereus yang terdapat di
dalam beras yang belum dimasak. Spora ini merupakan bakteri yang bisa menyebabkan
keracunan makanan. Dalam beberapa kondisi, Bacillus cereus ini bisa bertahan selama proses
pemasakan nasi. Spora Bacillus ini bisa bertumbuh menjadi bakteri ketika nasi disimpan dalam
suhu ruangan. Suhu lingkungan sangat mempengaruhi pertumbuhan dan kegiatan fisiologi suatu
mikroba atau bakteri. Kebanyakan mikroorganisme perusak bahan pangan atau makanan
mempunyai suhu pertumbuhan optimal seperti suhu pertumbuhan mikroorganisme mesofilik,
yaitu pada kisaran temperatur 25° C-30° C.
Proses Pembusukan pada Nasi

Pada proses pembusukan nasi, Jika di tempat tertutup nasi tinggal di simpan kan di
tempat yang lembab kurang lebih selama 20 jam - 24 jam dan akan membusuk. jika di
tempat terbuka di biarkan di tempat yang sudah di setujui dan di tempat yang sudah di
basahi agar lembab di diam kan selama 2 - 3 hari dan akan busuk . dan jika di kulkas
simpan di tempat yang dingin & lembab biarkan selama 4 - 6 dan akan membusuk .
Cara Memperpanjang Umur Simpan Nasi
Cara memperpangang umur simpan nasi bisa dilakukan dengan cara
menyimpan nasi sisa dengan menggunakan mesin penanak nasi atau rice cooker.

dan mineral.Setiap 100 g beras giling mengandung energi 360 kkal dan menghasilkan 6 g
protein.
5. Kerupuk karak merupakan jenis kerupuk yang diolah dengan menggunakan bahan dasar dari
beras atau nasi dengan penambahan bleng dan bumbu-bumbu secukupnya hingga
menghasilkan gendar.
