Homemade Yogurt

Resep diadaptasikan dari web Blog Make Your Own Yogurt - How to Make Yogurt

Untuk 200 ml yogurt (per kelompok), total ada 3 kelompok untuk tiap kelas

Bahan:
- 200 ml susu full cream (saya menggunakan merk Diamond)
- 1 sendok makan susu bubuk full cream, saya pakai merk Dancow full cream (optional)
- 1 sendok makan plain yogurt sebagai starter (saya pakai merk Biokul plain)

Cara membuat:

1. Keluarkan yogurt plain yang anda peroleh dari supermarket dari dalam kulkas, biarkan agar berada di
suhu ruang minimal 1 jam.

2. Rebus wadah yang akan anda gunakan membuat yogurt di dalam air mendidih selama 2 -3 menit. Angkat
dan biarkan mendingin.

3. Siapkan panci kecil, masukkan susu cair full cream dan susu bubuk, aduk rata hingga susu bubuk larut.
Jika anda akan membuat yogurt dengan kandungan lemak rendah maka gunakan susu cair rendah lemak
dan hilangkan penggunaan susu bubuk. Yogurt yang terbuat dari susu rendah lemak umumnya kurang padat
dan creamy.

4. Masak susu dengan api kecil sambil diaduk-aduk hingga mulai muncul gelembung-gelembung kecil dan
busa. Jaga jangan sampai susu mendidih. Jika telah muncul gelembung kecil segera matikan kompor dan
biarkan susu mendingin.

5. Saya meletakkan panci berisi susu diatas baskom berisi air es, cara ini membuat proses pendinginan bisa
lebih cepat. Tapi jika anda cukup sabar menunggu susu menjadi hangat maka skip saja cara ini. Nah, jika
susu telah cukup hangat, test dengan memasukkan ujung jari ke dalamnya, jika ujung jari anda terasa
nyaman maka suhu susu telah cukup. Jaga jangan sampai susu menjadi dingin. Sekarang kita siap
mencampurnya dengan kultur bakteri.

6. Ambil 3 sendok makan yogurt plain yang anda dapatkan dari supermarket, masukkan ke dalam wadah
yang telah anda persiapkan untuk membuat yogurt. Tuangkan sekitar 200 ml susu cair hangat ke dalamnya,
aduk perlahan. Jangan mengaduk kuat-kuat hingga yogurt menjadi halus, aduk perlahan, perlakukan kultur
dengan lembut. Tambahkan lagi 200 ml susu cair dan aduk dengan lembut. Terakhir masukkan sisa susu
cair, aduk hingga rata.

7. Tutup wadah rapat-rapat. Bungkus dengan handuk tebal dan simpan di dalam tumpukan kain atau dalam
pakaian di lemari baju anda. Atau bungkus dengan handuk dan letakkan di tempat terhangat dalam rumah
anda (suhu dibuat sekitar 38 derajat). Biarkan selama minimal 7 jam.

2. Cook the milk in low heat, stirring until small bubbles begin to appear small and foam. Take care
not to boil the milk. If you have small bubbles appear immediately turn off the stove and allow to
cool milk.
3. if the milk was warm enough, test by inserting a finger into it. Now we're ready to mix it with plain
yoghurt as bacterial culture
4. Take 1 tablespoons of plain yogurt that you get from the supermarket, in a container you have been
working to make yogurt. Pour about 100 ml of warm liquid milk into it, stir gently. Do not stir
vigorously. Add another 100 ml milk and stir gently until blended.
5. Close the container tightly. Wrap in a thick towel or wrap a towel and put it in the warmest spot in
your home (temperature made around 38 degrees). Leave for at least 7 hours.
