Ethanol (Alkohol)
Etanol, disebut juga etil alkohol, alkohol murni, alkohol absolut, atau alkohol saja, adalah sejenis
cairan yang mudah menguap, mudah terbakar, tak berwarna, dan merupakan alkohol yang paling
sering digunakan dalam kehidupan sehari-hari. Senyawa ini merupakan obat psikoaktif dan dapat
ditemukan pada minuman beralkohol dan termometer modern. Etanol adalah salah satu obat rekreasi
yang paling tua.
Ethanol merupakan senyawa yang tidak terdapat secara bebas di alam. Zat ini adalah golongan
alkohol biasa atau alkohol primer yang dibuat dari glukosa atau jenis gula yang lain dengan jalan
peragian.

Penggunaan alkohol antara lain :

• Sebagai minuman
• Sebagai bahan kimia dan pelarut
• Sebagai bahan bakar motor
• Digunakan dalam bidang farmasi
Ethanol merupakan senyawa yang tidak terdapat secara bebas di alam. Zat ini adalah golongan alkohol biasa
atau alkohol primer yang dibuat dari glukosa atau jenis gula yang lain dengan jalan peragian.
Penggunaan alkohol antara lain :

Sebagai bahan kimia dan pelarut
Sebagai bahan bakar motor
Digunakan dalam bidang farmasi
Alkohol sebagai minuman keras dibagi menjadi 2 jenis, yaitu:
- Minuman yang tidak disuling, yaitu minuman yang hanya mengandung alkohol paling banyak 12%, contoh bir
dan anggur.
- Minuman yang disuling, yaitu minuman yang mengandung alkohol kurang lebih 55%, contoh Whisky, arak,
cognac
Agar alkohol yang digunakan sebagai bahan bakar dan keperluan farmasi serta industri tidak diminum, maka eth
anol dibuat tidak terminum dengan cara diberi methanol dan zat pewarna(denaturasi alkohol), misalnya alkohol y
ang dipakai sebagai spirtus bakar.

Karakteristik Bahan dan Produk Ethanol
• Ethanol merupakan zat cair jernih dan dapat tercampur dengan air dalam semua perbandingan (bersifat missible)
• Dapat melarutkan senyawa organik

Bahan baku untuk memproduksi ethanol dengan cara fermentasi dapat di produksi dari 3 macam karbohidrat, yaitu:
- Bahan-bahan yang mengandung gula atau disebut juga sustansi sakharin, rasanya manis seperti misalnya gula tebu, gula
bit, molase (tetes), macam-macam sari buah-buahan dan lain-lain.
- Bahan yang mengandung pati, misalnya: padi-padian, jagung, gandum, kentang sorgum, malt, barley, ubi kayu dan lain-lain.
- Bahan-baha yang mengandung selulosa, misalnya: kayu, cairan buangan pabrik pulp dan kertas (waste sulfite liquor)
Gas-gas hidrokarbon
Sumber bahan-bahan ini pada negara-negara penghasil alkohol berbeda-beda tergantung pada banyaknya bahan bahan yang
dapat diperoleh pada negara-negara itu.
 Bahan Baku Proses Pembuatan Ethanol
01 Substansi sakharin
Tetes (molase) bersifat asam, mempunyai pH 5,5-6,5 yang disebabkan
oleh adanya asam-asam organik yang bebas. Kualitas molase yang
dihasilkan dari suatu industri gula dipengaruhi oleh cara pembersihan
niranya. Bila kurang sempurna, maka kotoran banyak terdapat dalam
molase. Warna molase pada umumnya berwarna coklat kemerahan. Hal
ini disebabkan antara lain pigmen melanoidin, dekorasi thermal dan
kimiawi dari komponen-komponen selain gula.
02 Proses fermentasi
Dalam proses fermentasi alkohol digunakan ragi. Ragi ini dapat
merubah glukosa menjadi alkohol dan gas CO2.
Pada umumnya ragi yang dipakai untuk membuat alkohol adalah jenis
Saccharomyces cerevisiae, yang mempunyai pertumbuhan sempurna
pada suhu ± 30oC dan pH 4,8.
Ragi menurut kegiatan selama fermentasi terbagi atas dua bagian, yaitu
Top Yeast (Ragi Atas). Ragi yang aktif pada permukaan atas media,
yang menghasilkan etanol dan CO2 dengan segera. Jenis ini biasanya
dijumpai pada industri alkohol dan anggur.

 Proses Pembuatan Ethanol
Pada dasarnya ada 2 macam cara pembuatan etanol, yaitu:
- Secara sintesis
- Secara fermentasi

Secara sintesis, dilakukan dengan menggunakan reaksi elementer

( hidrasi katalitik etana), untuk mengubah bahan baku menjadi etanol.
SINTESIS Etanol dibuat dalam skala produksi dengan mereaksikan etena dengan
uap. Katalis yang digunakan adalah silikon dioksida padat yang dilapisi
dengan asam fosfat(V). Reaksi yang terjadi dapat balik (reversibel).
Hanya 5% dari etena yang diubah menjadi etanol pada setiap kali
pemasukan ke dalam reaktor. Dengan mengeluarkan etanol dari
campuran kesetimbangan dan mendaur-ulang etena, maka pengubahan
etena menjadi etanol secara keseluruhan dapat mencapai 95%.
Proses fermentasi akan berjalan beberapa jam setelah semua bahan
dimasukkan ke dalam fermentor. Kalau anda menggunakan fermentor
FERMENTASI yang tembus padang (dari kaca misalnya), maka akan tampak
gelembung-gelembung udara kecil-kecil dari dalam fermentor.Gelembung
-gelembung udara ini adalah gas CO2 yang dihasilkan selama proses
fermentasi. Kadang-kadang terdengar suara gemuruh selama proses
fermentasi ini. Selama proses fermentasi ini usahakan agar suhu tidak
melebihi 36oC dan pH nya dipertahankan 4.5 – 5. Proses fermentasi
berjalan kurang lebih selama 66 jam atau kira-kira 2.5 hari. Salah satu
tanda bahwa fermentasi sudah selesai adalah tidak terlihat lagi adanya
gelembung-gelembung udara. Kadar etanol di dalam cairan fermentasi
kurang lebih 7% – 10 %.

Proses pembuatan alcohol dengan proses fermentasi (bahan hasil pertanian)
pada tahap awal akan dibutuhkan proses tambahan yang tidak dilakukan pada fermentasi molase. Tahap tahap n
ya adalah sebagai berikut:

Proses Gelatinasi
Dalam proses gelatinasi, bahan baku ubi kayu, ubi jalar, atau jagung dihancurkan dandicampur air sehingga menj
adi bubur, yang diperkirakan mengandung pati 27-30 persen.Kemudian bubur pati tersebut dimasak atau dipanas
kan selama 2 jam sehingga berbentuk gel. Proses gelatinasi tersebut dapat dilakukan dengan 2 cara, yaitu: Bubu
r pati dipanaskan sampai 130oC selama 30 menit, kemudian didinginkan sampaimencapai temperatur 95oC yang
diperkirakan memerlukan waktu sekitar ¼ jam. Temperatur 95oC tersebut dipertahankan selama sekitar 11/4 jam,
sehingga total waktu yang dibutuhkan mencapai 2 jam. Bubur pati ditambah enzyme termamyl dipanaskan langsu
ng sampai mencapai temperatur 130oC selama 2 jam. Gelatinasi cara pertama, yaitu cara pemanasan bertahap
mempunyai keuntungan , yaitu pada suhu 950C aktifitas termamyl merupakan yang paling tertinggi, sehingga me
ngakibatkan yeast atau ragi cepat aktif. Pemanasan dengan suhu tinggi (1300C) pada cara pertama ini dimaksud
kan untuk memecah granula pati, sehingga lebih mudah terjadi kontak dengan air enzyme. Perlakuan pada suhu
tinggi tersebut juga dapat berfungsi untuk sterilisasi bahan, sehingga bahan tersebut tidak mudah terkontaminasi.
Gelatinasi cara kedua, yaitu cara pemanasan langsung (gelatinasi dengan enzymetermamyl) pada temperature 1
30oC menghasilkan hasil yang kurang baik, karenamengurangi aktifitas yeast. Hal tersebut disebabkan gelatinasi
dengan enzyme pada suhu130oC akan terbentuk tri-phenyl-furane yang mempunyai sifat racun terhadap yeast.G
elatinasi pada suhu tinggi tersebut juga akan berpengaruh terhadap penurunan aktifitastermamyl, karena aktifitas
termamyl akan semakin menurun setelah melewati suhu 95oC(Wasito, 1981).
 Proses Saccharifikasi
Tahap sakarifikasi merupakan tahap pemecahan gula kompleks menjadi gula sederhanayang dilakukan pada s
ebuah tabung pada rangkaian peralatan untuk produksi bioethanol.Saccharifikasi melibatkan proses sebagai b
erikut:
• Pendinginan bubur sampai suhu optimum enzim sakarifikasi bekerja
• Pengaturan pH optimum enzim• Penambahan enzim (glukoamilase) secara tepat
•Mempertahankan pH dan temperature pada rentang 50 sd 600C, sampai proses saccharifikasi selesai (Dilak
ukan dengan pengetesan gula sederhana yang dihasilkan).

Fermentasi
Proses fermentasi akan berjalan beberapa jam setelah semua bahan dimasukkan ke dalam fermentor. Kalau and

Distilasi dan Dehidrasi
Setelah proses fermentasi selesai, masukkan cairan fermentasi ke dalam evaporator atau boiler.
Panaskan evaporator dan suhunya dipertahankan antara 79 – 81oC. Pada suhu ini etanol sudah
menguap, tetapi air tidak menguap. Uap etanol dialirkan ke distilator. Bioetanol akan keluar dari p
ipa pengeluaran distilator. Distilasi pertama, biasanya kadar etanol masih di bawah 95%. Apabila
kadar etanol masih di bawah 95%, distilasi perlu diulangi lagi (reflux) hingga kadar etanolnya 95
%. Apabila kadar etanolnya sudah 95% dilakukan dehidrasi atau penghilangan air. Untuk menghil
angkan air bisa menggunakan kapur tohor atau zeolit sintetis. Tambahkan kapur tohor pada etan
ol. Biarkan semalam. Setelah itu didistilasi lagi hingga kadar airnya kurang lebih 99.5%
