Uji Antagonis Jamur Tempe (Rhizopus Sp) terhadap Bakteri
Patogen Enterik
Abstrak
Tempe merupakan produk pangan Indonesia yang terbuat dari fermentasi kedelai dari Rhizopus
oligosporus. Peranan Rhizopus oligosporus pada tempe sangat penting, yaitu sebagai jamur utama yang
mengubah komposisi substrat kedelai menjadi bahan pangan yang lebih bergizi yang mengandung banyak
enzim dan senyawa bioaktif, termasuk senyawa antibakteri. Penelitian ini bertujuan untuk mengetahui
aktivitas antibakteri cendawan Rhizopus sp yang diisolasi dari tempe komersial terhadap beberapa bakteri
enteropatogen yaitu Escherichia coli ATCC 25922, Salmonella typhimurium ATCC 14028 dan Shigella
flexneri ATCC 12022. Pengujian dilakukan dengan uji antagonisme. B. dengan cara perbanyakan yaitu
dengan melapisi piringan SDA yang ditumbuhkan dengan Rhizopus sp pada agar Muller-Hinton yang
telah diinokulasi bakteri uji. Inkubasi berlangsung selama 24 jam pada suhu 37°C. Hasil penelitian
menunjukkan bahwa Rhizopus sp bersifat antagonis terhadap bakteri uji dan menghasilkan zona hambat
28 mm terhadap Escherichia coli ATCC 25922, zona hambat 26 mm terhadap Salmonella typhimurium
ATCC 14028 dan zona hambat 39,5 mm terhadap Shigella flexneri ATCC 12022. menyimpulkan bahwa
Rhizopus sp hasil isolasi tempe bersifat antagonis terhadap bakteri enteropatogen. Hasil penelitian ini
menegaskan manfaat tempe sebagai pangan fungsional.

Abstract
Tempe is an Indonesian food product made from fermented soybeans from Rhizopus oligosporus.
The role of Rhizopus oligosporus in tempeh is very important, namely as the main fungus that
changes the composition of soybean substrates into more nutritious food ingredients that contain
many enzymes and bioactive compounds, including antibacterial compounds. This study aims to
determine the antibacterial activity of the fungus Rhizopus sp isolated from commercial tempeh
against several enteropathogenic bacteria, namely Escherichia coli ATCC 25922, Salmonella
typhimurium ATCC 14028 and Shigella flexneri ATCC 12022. The test was conducted with an
antagonism test. B. by means of propagation, namely by coating SDA plates grown with Rhizopus
sp on Muller-Hinton agar which has been inoculated with the test bacteria. Incubation lasted for 24
hours at 37°C. The results showed that Rhizopus sp was antagonistic to the tested bacteria and
produced an inhibition zone of 28 mm against Escherichia coli ATCC 25922, an inhibition zone of
26 mm against Salmonella typhimurium ATCC 14028 and an inhibition zone of 39.5 mm against
Shigella flexneri ATCC 12022. concluded that Rhizopus sp produced Tempe isolation is
antagonistic to enteropathogenic bacteria. The results of this study confirm the benefits of tempeh
as a functional food.
