Pengaruh Lama Fermentasi Terhadap Kadar Alkohol
ABSTRAK
Pada penelitian ini sampel tape ketan hitam dan tape singkong yang telah
difermentasi selama 24 jam, 48 jam, 72 jam, 96 jam dan 120 jam ditumbuk sampai
halus dan ditambah aquades. Campuran yang diperoleh didestilasi, destilat yang
dihasilkan dimasukkan dalam botol dan ditimbang dengan satuan gram. Destilat
yang sudah ditimbang dianalisis menggunakan metode kromatografi gas. Data yang
diperoleh dianalisis dengan analisis varians (ANOVA) untuk menguji adanya
perbedaan konsentrasi kadar alkohol tape ketan hitam dan tape singkong selama
fermentasi. Penelitian ini bertujuan untuk mengetahui pengaruh lama fermentasi
terhadap kadar etanol tape ketan hitam dan tape singkong, untuk mengetahui
perbedaan kadar etanol tape ketan hitam dengan tape singkong. Hasil penelitian
menunjukkan bahwa ada pengaruh lama fermentasi terhadap kadar alkohol tape
ketan ketan hitam dan tape singkong. Kadar etanol tape ketan hitam berturut-turut
sebesar 0.388 %, 1.176%, 1.056%, 3.884% dan 7.581%. Lama fermentasi 96 dan
120 jam berpengaruh sangat nyata terhadap kadar etanol tape ketan hitam diantara
lama fermentasi lainnya. Kadar etanol tape singkong berturut-turut sebesar 0.844%,
2.182%, 4.904%, 6.334%, dan 11.811%. Lama fermentasi 120 jam berpengaruh
sangat nyata pada kadar etanol tape singkong di antara lama fermentasi lainnya.

ABSTRACK
In this study, samples of black sticky tape and tape cassava which has been
fermented for 24 hours, 48 hours, 72 hours, 96 hours and 120 hours until finely and
added distilled water. Obtained mixture is distilled, the distillate produced inserted
in the bottle and weighed in grams. Already weighed distillate was analyzed using
gas chromatography method. Data were analyzed by analysis of variance (ANOVA)
to test for differences in the level of alcohol concentration of black sticky tape and
tape cassava during fermentation. This study aimed to determine the effect on
ethanol fermentation of black sticky tape and tape cassava, to know the different
ethanol concentration of black sticky tape to tape cassava. The results showed that
there was an effect on levels of alcohol fermentation time tape sticky black rice and
cassava. Black sticky tape ethanol respectively by 0388%, 1,176%, 1,056%,
3,884% and 7,581%. 96 fermentation time and 120 hours of very significant effect
on the levels of black sticky tape ethanol fermentation among others. Cassava
ethanol respectively by 0844%, 2182%, 4904%, 6334%, and 11 811%. 120 hours
fermentation time highly significant effect on the ethanol content of fermented
cassava among other fermentation time.
