Apa itu Espresso Concentrate?


Espresso Concentrate adalah kopi dengan hasil brewing metode steeping / merendam ground coffee grind size turkish menggunakan
filter selama 2 jam , dan direndam menggunakan air panas. Tujuannya untuk menghasilkan rasa kopi yang pekat dan intense sama
seperti Espresso.

Mengapa menggunakan Espresso Concentrate untuk 1Liter Bottle?


• Untuk menjaga konsistensi rasa dari produk minuman dengan espresso based khusus untuk 1 Liter Bottle.
• Untuk memudahkan routine partner dalam pembuatan 1 Liter beverage

Kapan store bisa menggunakan recipe Espresso Concentrate ini?


Setelah BOM dalam system SAP terupdate, atau start per 8 Oct 2020

• Apakah store bisa menggunakan Whole Bean lain untuk membuat Espresso Concentrate?
• Tidak bisa. Espresso concentrate HARUS menggunakan WB Espresso Roast, sesuai dengan yang beans biasa kita gunakan di
Mastrena.
• Apakah store bisa menggunakan Espresso Concentrate untuk membuat 1L Cold Brew?
• Tidak bisa. 1L Cold Brew tetap menggunakan WB Cold Brew Blend dan tidak ada perubahan recipe.
• Berarti store harus membuat 2 coffee yang berbeda dengan menggunakan Toddy Bucket?
• Betul. Store harus membuat:
• Cold Brew dengan menggunakan WB Cold Brew Blend
• Espresso Concentrate dengan menggunakan WB Espresso Roast.

DISCLAIMER

• Semua minuman 1 liter bottle yang sebelumnya menggunakan bahan dasar espresso dari Mastrena, akan diganti dengan
menggunakan espresso concentrate dengan proporsi yang sama untuk recipenya.
• Partner harus check kondisi Master Grinder atau Ditting Grinder store masing-masing
• Shelf life ground coffee adalah 24 hours dengan container kedap udara, jika store akan menggiling ground coffee sehari sebelumnya.
• espresso concentrate yang sudah dibrew dapat disimpan di chiller selama 12 jam.
• Pastikan toddy bucket jumlahnya sesuai kebutuhan. Jika store membutuhkan bucket lebih, dapat meminjam dari store lain yang
slow moving transaction.
• umumnya, dibutuhkan 4-5 batches espresso concentrate toddy brewer untuk transaksi botol sebanyak 500-1000 USD
• Setiap batch espresso concentrate dibrew selama 2 jam. Silakan store atur sesuai kebutuhan.
• Store dapat menggunaka Cambro untuk menampung espresso concentrate yang sudah didinginkan dari dalam chilled temperature
dan kondisi siap digunakan.
