Apa itu SERABI ?
SERABI (kadang disebut Surabi) merupakan
jajanan pasar tradisional yang berasal dari
Jawa Barat seperti Bandung, Ciamis , Cianjur
dan Daerah priangan lainnya selalu terjaja
panganan khas yang satu ini dengan rasa
yang manis (gula aren) dan asin (oncom).
Namun seiring dengan perkembangannya,
serabi kini telah memiliki banyak varian rasa
dengan aneka toping modern seperti sosis,
kornet, durian, keju, coklat, telur dan masih
banyak lagi. Sehingga serabi tidak lagi dicap
sebagai makanan kelas rendahan, karena saat
ini banyak kedai atau Cafe yang menjual
serabi dengan konsep modern. Sehingga
jadilah serabi makanan khas tradisional
dengan cita rasa yang modern.
 Serabi merupakan jajanan pasar tradisional
yang berasal dari Indonesia. Konon, kuliner tradisi
Jawa Barat tersebut sudah ada sejak 1923. Dalam
sejarahnya, serabi berasal dari bahasa sunda yaitu
"sura" yang artinya besar.
Serabi sering disebut mirip dengan pancake yang
berasal dari Belanda. Jika pancake menggunakan
tepung dan telur, adonan serabi dibuat dengan Sejarah
menggunakan tepung terigu, tepung beras, dan santan

Ada dua rasa yang dimiliki oleh camilan ini.
Pertama serabi manis yang ditambahkan kinca atau
gula merah cair. Kedua, serabi asin yang ditaburi
oncom di atasnya.
Meski zaman sudah modern, cara memasak
serabi tidak pernah berubah. Serabi dimasak dengan
bi
menggunakan tungku dan wadah yang terbuat dari
tanah liat. Penjual serabi Bandung juga masih
menggunakan bara api dari kayu yang dibakar untuk
memasak.

Untuk mengambil dan mencampurkan
bahan. Takaran
SPATULA Untuk menakar air dan santan..
Untuk mengangkat serabi jika sudah
matang.
Timbangan
Untuk menimbang tepung.
Kompor Portable
Untuk memasak. Pisau
Untuk memotong.

Talenan
Untuk alas memotong. Baskom kecil
Sebagai wadah untuk mencampurkan
bahan.
Pengaduk
Untuk mencampurkan bahan supaya
Teflon
merata. Untuk memanggang serabi.
 Bahan

Tepung Beras Tepung Terigu Santan Air Telur

150 gram 50 gram 100 ml (untuk adonan 100 ml (untuk adonan 1 butir
serabi) serabi)
100 ml (untuk kuah) 200 ml (untuk kuah)
 Bahan

Fermipan Gula Jawa

½ sendok teh 60 gram

Baking Powder Garam Halus Gula Pasir

1 sendok teh ½ sendok teh (untuk 1 sendok makan
adonan serabi)
Secubit (untuk kuah)
LANGKAH - LANGKAH
Ayak tepung beras, tepung terigu, baking powder, fermipan, dan
garam sampai tercampur rata.

Campur santan dan air sampai rata.

Masukkan santan sedikit demi sedikit ke dalam tepung, kocok lepas

telur dan campurkan ke dalam tepung, kemudian aduk hingga rata.

Diamkan adonan selama 1 jam.

Panaskan wajan atau teflon.

6 Tuangkan adonan serabi setengah sendok sayur ke dalam wajan.

7 Tunggu hingga bersarang dan bagian bawahnya kecoklatan. Jika sudah,

angkat serabi dan lakukan berulang hingga adonannya habis.

8 Untuk kuah : Panaskan santan, air, gula jawa, gula pasir, garam, dan
pandan. Aduk hingga matang kemudian sajikan Bersama serabi.
