Indonesia merupakan negara penghasil kelapa sawit dan eksportir

Crude Palm Oil (CPO) terbesar di dunia. Namun, jika dilihat dari
perkembangan industri turunannya saat ini, Indonesia masih lebih rendah
dibandingkan dengan Malaysia. Hal ini dikarenakan sebagian besar produksi
dialokasikan untuk minyak CPO dan Palm Kernel Oil (PKO) saja, tidak
diolah lebih lanjut menjadi produk hilir. Padahal jika dilihat dari harga
jualnya, industri hilir kelapa sawit lebih menjanjikan nilai tambah yang
lebih baik dibandingkan hanya sekedar ekspor CPO saja.

bertujuan

untuk

memaparkan proses

pembuatan margarin, jenis-jenis margarin dari bagian CPO dengan

mempertimbangkan keseluruhan mata rantai pohon industri kelapa sawit.
Turunan produk kelapa sawit dari hulu hingga hilir yaitu CPO untuk produk
hulu, olein untuk produk antara, serta minyak goreng dan margarin untuk
produk hilir. Lemak Margarin dengan sifat fisik yang baik dibuat dari
campuran minyak stearin kelapa sawit (RBDPS), minyak kelapa sawit
(RBDPO), minyak kelapa (CNO) dengan tahap proses netralisasi, proses
bleaching (pemucatan), hidrogenasi, proses deodorisasi, proses emulsifikasi
dan packaging.

ABSTRACT
Indonesia is an oil palm producers and exporters of Crude Palm Oil (CPO)
in the world. However, if seen from the development of the derivatives industry
today, Indonesia is still lower compared to Malaysia. This is because most of the
production is allocated for oil (CPO) and Palm Kernel Oil (PKO) only, not further
processed into downstream products. Whereas if viewed from the selling prices of
palm oil downstream industry, more promising a better value than merely
exporting CPO course.

This scientific paper aims to expose the process of making these kinds of
margarine, margarine from the CPO by considering the whole chain of industrial
palm oil trees. Derivatives are products Palm oil from upstream to downstream
i.e. CPO for upstream products, between products, olein and cooking oil and
margarine to downstream products. Fat Margarine with good physical properties
is made from a mixture of palm oil stearin (RBDPS), palm oil (RBDPO), coconut
oil (CNO) and the stage of the process of neutralization, bleaching, hydrogenation
process, deodorization process, emulsification process, and packaging.
