Saus cabai merupakan olahan pangan yang sering digunakan oleh masyarakat, namun industri
rumahan terkadang belum memperhatikan kebersihan saat proses produksi saus cabai. Saus cabai kemasan
plastik juga memiliki kelemahan yaitu tidak tahan panas, tidak hermetis, dan mudah terjadi pengembunan uap
air di dalam kemasan ketika suhu turun. Kelemahan tersebut dapat menyebabkan saus cabai rentan
kebocoran dan kontaminasi mikroba, sehingga berbahaya bila dikonsumsi oleh masyarakat. Tujuan penelitian
ini adalah untuk mengetahui nilai Angka Lempeng Total (ALT) pada saus cabai.
Penelitian ini merupakan penelitian deskriptif kuantitatif. Sampel diambil dengan teknik accidental
sampling di Pasar Pancasila Kota Tasikmalaya sebanyak lima sampel. Analisis data dilakukan dengan analisis
statistik deskriptif. Data yang digunakan adalah data primer yaitu seluruh data yang didapat secara langsung
dari penelitian.
Hasil penelitian uji ALT saus cabai dengan suhu inkubasi 30oC selama 48 jam diperoleh nilai ALT yaitu
6,1x102 koloni/g sampai dengan 3x103 koloni/g. Saus cabai yang dijual oleh pedagang di Pasar Pancasila
memenuhi syarat nilai ALT menurut SNI No. 7388 tahun 2009 dengan batas maksimum yaitu 1x104 koloni/g.
Abstract
Chili sauce is a food preparation that is often used by the public, but home industries didn’t yet paid
attention to cleanliness during the chili sauce production process. Plastic packaging chili sauce also has the
disadvantage of not being heat resistant, not hermetic, and easy to condense moisture in the package when
the temperature drops. These weaknesses can cause chili sauce susceptible to leakage and microbial
contamination, it is dangerous if consumed by the public. The purpose of this study was to determine the value
of Total Plate Count (TPC) in plastic packaging chili sauce.
This research is quantitative descriptive. Samples were taken with five samples in the accidental
sampling technique in the Pancasila Market in Tasikmalaya City. Data analysis was carried out by descriptive
statistical analysis. The data used are primary data, namely all data obtained directly from the study.
The results of the TPC test for chili sauce with incubation temperature of 30oC for 48 hours obtained
an TPC value of 6.1x102 colonies/g to 3x103 colonies/g. The chili sauce sold by traders in the Pancasila Market
fulfills the requirements of the TPC value according to the SNI No. 7388 in 2009 with a maximum limit of 1x104
colonies/g.
