ABSTRAK
Arak Bali merupakan minuman tradisional yang telah dikenal secara turun-temurun oleh masyarakat
di Bali. Minuman tersebut dibuat dan diolah dengan cara yang sederhana dan menjadi ciri khas dari
masing-masing daerah produsen arak yang ada di Bali, salah satunya seperti pembuatan arak
tradisional di Desa Kebung, Karangasem. Daerah ini merupakan salah satu desa lokasi pengrajin arak
tradisional. Tujuan dari adanya penelitian ini adalah untuk memperoleh informasi berupa keterkaitan
antara proses pembuatan arak tradisional dengan materi yang dipelajari dalam mata pelajaran IPA di
jenjang Sekolah Menengah Pertama (SMP). Metode yang digunakan dalam penelitian ini ialah dengan
cara observasi secara langsung di Desa Kebung, Karangasem melalui wawancara dengan beberapa
narasumber, serta mengacu pada literatur yang relevan. Hasil yang diperoleh dari penelitian ini ialah
pembuatan arak masih dilakukan dengan cara sederhana yang bersifat turun-temurun. Pembuatan arak
tersebut melibatkan alat yang dinamakan dengan Penadongan dengan menerapkan prinsip distilasi.
Proses pembuatan arak menghabiskan waktu sekitar 6 jam dengan api yang dijaga agar selalu
menyala. Proses pembuatan arak memiliki keterkaitan yang sangat erat dengan beberapa cabang ilmu
alam yang mana secara khusus menerapkan prinsip yang ada di bidang fisika, kimia, dan biologi.
ABSTRACT
Arak Bali is a traditional drink that has been known for generations by people in Bali. The drink is
made and processed in a simple way and is characteristic of each area of arak producers in Bali, one
of which is the manufacture of traditional arak in Kebung Village, Karangasem. This area is one of
the villages where traditional arak craftsmen are located. The purpose of this research is to obtain
information in the form of a link between the process of making traditional arak and the material
studied in science subjects at the junior high school level. Arak Bali is a traditional drink that has

between the process of making traditional arak and the material studied in science subjects at the
junior high school level. The method used in this study is by directly observing in Kebung Village,
Karangasem through interviews with several sources, as well as referring to relevant literature. The
result of this study is that the making of arak is still done in a simple way that is hereditary. The
making of the arak involves a tool calledDongan by applying the principle of distillation. The process
of making arak takes about 6 hours with the fire that is kept to always be lit. The process of making
arak has a very close relationship with several branches of natural sciences which specifically apply
the principles that exist in the fields of physics, chemistry, and biology.
