Pasteur(1822-1895), setelah menyelesaikan penelitian dengan
menggunakan mikroskopi dan melanjutkan ke cabang ilmu
pengetahuan baru yaitu bidang mikrobiologi. Saat ituLouis Pasteur
tinggal di Inggris dan dia mulai mempunyai pengertian teoritis yang
baik tentang mikroba. Dia mencoba menerapkan temuannya pada
masalah praktis untuk mencegah kerusakan anggur. Banyak keluarga
yang mata pencahariannya tergantung pada industri anggur.
Ekonomi Prancis juga sangat bergantung pada ekspor anggur. Oleh
sebab itu, kerusakan anggur merupakan masalah penting.
