The kind and generous staff from Ayam Penyet Ria actually shared their signature recipe, Ayam Penyet.
INGREDIENTS
Ingredient B:
1. Wash chicken until clean, then add five litres of boiling water and santan. Allow it to simmer for an hour.
3. While frying the blended ingredients, add in the lengkuas, limau purut and turmeric powder.
4. Add these marinade to the chicken and simmer for another hour so the traditional spices can seep into
the meat.
5. Remove chicken from pot, allow cooling and coating with rice flour.
6. Fry until golden brown, then smash it so the bones and meat are separated from one another.
Bahan A Bahan B:
Setengah ekor ayam (dipotong 4) 1 labu bawang besar (dipotong baji)*
2 batang serai* 2-3 ulas bawang putih*
2- 3 ulas bawang putih* 7 tangkai lada hidup - buang bijinya*
1" halia* 9 biji cili padi (ikut suka)*
1" lengkuas* 1 1/2" belacan*
1" kunyit hidup* (boleh ganti dengan serbuk) sedikit air asam jawa/ perahan limau nipis
sedikit ketumbar dan jintan manis* gula merah secukup rasa
garam secukupnya* (* dikisar sekali)
1.Panaskan sedikit minyak di dalam kuali, gorengkan semua bahan bertanda * sehingga agak garing.
2. Tumbuk semua bahan yang telah digoreng, masukkan gula merah, tumbuk lagi. Tuangkan air asam
jawa @ perahan limau nipis.
Enak dimakan bersama nasi putih, jemput makan... p/s: timun dah hiris lupa nak letak.. hehe
