Potentially Hazardous Food Information
Potentially hazardous foods is a food that have certain characteristics that support the
growth of pathogenic microorganisms or the production of toxins.
Bakteri membutuhkan faktor faktor seperti nutrisi, aktivitas air, keasaman (pH)
kombinasi dari hal tersebut yang apabila diberikan waktu dan suhu mendukung bakteri
tersebut akan menghasilkan toksin pada tingkat tertentu sehingga membuat makanan
tidak aman yang membuat penyakit bawaan makanan apabila dikonsumsi
Homemade food or other food that bring to the quarantine facility will potentially
hazardous without proper time and temperature control during transportation from the
food producing location to the quarantine facility
Factors affecting microbial growth include the nutrients, moisture, acidity (pH) and gas
atmosphere of the food. If the combination of these factors creates a favourable
environment and the food is not kept under temperature control, microorganisms can
grow and form toxins. If the levels of pathogenic microorganisms or toxins reach
unsafe levels, foodborne illness may result

Makanan makanan berpotensi berbahaya umumnya basah, kaya nutrisi dengan pH
netral contohnya bisa dilihat pada tabel dibawah
Potentially hazardous food is generally moist, nutrient-rich food with neutral pH can
be shown in table below:

All participant are allowed to bring food to the quarantine facility if the food is not
classified as potentially hazardous food that does not support growth of bacteria such
as dried or deep fried food, commercial food that minimises microbial growth or has
eliminated microorganisms, or food that contain additives (nitrite, benzoat, etc)

- Makanan kaleng yang belum dibuka (Unopened canned food)

- Buah/sayur mentah yang belum diproses (Whole raw fruit & vegetables)
- Keju Granular (Hard Cheese e.g. Parmesan, Pecorino, Manchego & Grana-
Padano)

- Kue atau kue berbahan buah seperti kue pisang (cake or fruit cake like banana
cake)
- Protein whey komersil (commercially whey protein)
- Atau jenis jenis makanan komersil yang mengandung pengawet (or other
commercially processed food that contain preservative)
